Dark chocolate cookies + sea salt

These delicious Dark Chocolate Sea Salt Cookies are the perfect afternoon treat, made in just half an hour with common ingredients found in your pantry. 3 tablespoons coconut oil
6 tablespoons olive oil
3/4 cup coconut sugar
1 teaspoon vanilla extract
1 tablespoon ground flaxseed meal
1 cup of gluten-free plain flour
2 tablespoons vanilla-flavored REDU collagen
1/2 teaspoon baking powder
2 teaspoons of cornstarch
1/4 teaspoon sea salt
2 handfuls of dark chocolate pieces
extra sea salt, for sprinkling

Preheat oven to 350°F / Line a large tray with parchment paper / In a small bowl, combine ground flaxseed and 3 tablespoons warm water, leave for a few minutes until thickened / In a medium bowl, whisk together oils, the sugar and vanilla and soaked flaxseed / In a separate bowl, sift the flour,
add the REDU collagen, baking powder, cornstarch and salt / Add the liquid ingredients and dark chocolate pieces, mixing for a few minutes until well combined / Scoop out 2 tablespoons of the mixture and roll into a ball smooth, flatten and place on baking sheet / Repeat until you have 10 cookies / Cook for 8 minutes, or until golden brown / Remove from oven, sprinkle with sea salt and let cool slightly before serving
